  • Heat oven 400.
  • Combine the oil, coconut, breadcrumbs, parsley, garlic, salt, paprika and cayenne.
  • Reserve 1/4 cup. Toss rest with shrimp to coat.
  • Pour sherry in a sprayed 9x13 baking dish.
  • Add shrimp.
  • Scatter on remaining mix.
  • Bake 15 minutes.
