My Ultra Tasty Totally Decadent Baked Spud

"This is what I make myself for dinner nearly every friday night, (unless I happen to be out of my mind and am sticking to my diet) Its got heaps on it, so make sure you have your appetite with you when having this. Note: I never actually wiegh or measure my serving, but the recipe couldn't be published until I put some kind or measurments. So I am kind of taking a stab in the dark here.All servings are according to your own personal preference. As much or as little as you like."

ingredients

  • 1 large baking potato
  • 1 teaspoon butter (as much or little as you like, you can omit it if you wish,)
  • 12 cup grated cheese
  • 2 slices bacon, cooked and crumbled (or you could use shredded ham)
  • 12 cup pineapple, drained (chunks or crushed)
  • 12 cup Coleslaw (any type you like is fine)
  • sour cream
  • 14 cup beetroot (drained and chopped)

directions

  • Bake potato in a 200c degree oven for at least one hour.
  • Once spud is cooked, top with toppings in this order.
  • Butter.
  • Cheese.
  • Bacon.
  • Pineapple.
  • Coleslaw.
  • Sour Cream.
  • Beetroot.
  • Spud is now ready for enjoyment!

I am a?36 year old aussie girl,I live in a quiet country town, which is only an hour from the City of Adelaide which is the capital of SA. I love it here, I have almost 2 acres of land, so theres plenty of room to move around. I would LOVE to?have my own vegetable garden, but I do not have a green thumb. And am quite unlucky in the growing plants department.?I have 2 young sons aged 14(Jacob) and 10(Phoenix) who are the worlds pickiest eaters, and I'm always on the look out for new and yummy ways to get them to eat good nutritious food. (veggies especially) It is quite a challenge seeing as dad is almost as picky as the kids!!! But he is learning not to be afraid of trying new things. I love baking, pies and cakes mostly, and i have a weakness for roast meats and potatoes, all the good warming comfort food!
