- 1 (4 -8 lb) pork roast (loin shoulder or butt)
- 3 1⁄2 cups cider vinegar
- 3 cups ketchup
- 1 3⁄4 cups Worcestershire sauce
- 1 tablespoon liquid smoke
- 1⁄2 cup honey
- 4 medium onions, chopped
- 1⁄2 cup brown sugar
- 1 tablespoon salt
- 1 tablespoon black pepper, coarsely ground
- 2 tablespoons Tabasco sauce
- 8 garlic cloves, halved
- cayenne pepper, to taste

SAUCE:
- Place liquid ingredients in large pot and heat slowly almost to boiling.
- Add onions and dry ingredients, stirring constantly until well blended.
- Cover, lower heat and simmer 45-60 minutes, stirring occasionally.
- Sauce may be used as a marinade for other meats or as a condiment since it freezes well.

PORK ROAST:
- Place pork roast in large glass dish and partially cover with about a quarter of the sauce.
- Cover bowl and marinate in refrigerator overnight, turning roast several times.
- Preheat oven to 300.
- Place pork and sauce in a roasting pan.
- Cover and cook for approximately 45 minutes per pound or until roast reaches an internal temperature of 170 taking care to baste frequently.
- To serve, chop or shred the roast and mix with several cups of remaining BBQ sauce until it is the consistency that you prefer.

The most defining trait in my life is that I am a mother to two wonderful boys (Tyler, 20 and Zayden, 9). I live in the little college town of Selinsgrove, Pennsylvania. It is the most wonderful place to live as it's nestled in the Appalachian Mountains and along the beautiful Susquehanna River.
Seeing that we live in Central Pennsylvania, our family is also a bunch of HARDCORE Penn State Nittany Lion fans! We are...PENN STATE! I was lucky enough to be given tickets to see Joe Paterno win his 400th game as the head coach of the football team. I cried like I did when my children were born.
The other love of my life is cooking. I didn't really start trying to cook until I was 20, but believe me I have made up for lost time! I absolutely adore baking and I do it whenever I can. I love making Christmas cookies and I have begun hosting our extended families at our home for Thanksgiving and Easter dinners. So far so good.
