Traditional Naan Bread

  • 23 cup milk (or water)
  • 2 cups all-purpose flour
  • 2 teaspoons onion seeds
  • 1 teaspoon yeast (Dry)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 4 tablespoons clarified butter
  • 2 tablespoons yoghurt

  • Whisk warm milk/water with the yeast and sugar until the yeast is dissolved.
  • Cover and let stand in a warm place for 10 minutes.
  • Sift flour and salt three times into a large bowl add the yeast mixture, half of the ghee and the yogurt.
  • Mix into a soft dough then knead on a floured surface for about 5 minutes or until dough is smooth and elastic.
  • Place the dough in a large greased bowl, cover and let stand in a warm place for 1 1/2 hours or until the dough is doubled in size.
  • Punch down dough then knead for 5 minutes.
  • Divide dough into 6 pieces.
  • Roll each piece out into 8 inch round nans.
  • Cover an oven tray with foil and grease the foil.
  • Brush the nan with a little of the remaining ghee and sprinkle with some of the kalonji.
  • Cook Nan one at a time under a very hot grill for about 2 minutes on each side or until puffed and just browned.

  1. Yummy! I used a pizza stone positioned close (3-4 inches) to the electric (grrr!) broiler coil. What is kalonji?
     
  2. Really enjoyed the naan - used half semolina and half all purpose flour, added onion powder and garlic powder and a half teaspoon of garam masala - used a skillet on the stovetop with olive oil and they were great!
     
  3. This was good, but not as soft as I would have liked.
     
  4. Very nice recipe. I often use this recipe for naan because I like how light and airy the yeast and minimal yogurt make it. Other recipes, while still good, are more dense and heavy when they have a lot of yogurt and no yeast. I prefer this recipe for our dinners, thank you for posting!

Tweaks

  1. Easy and delicious! I used melted butter instead of clarified and it turned out fine.
     
  2. this naan was great, minus the fact that there wasn't any salt in it (that's why i had to ding it by one star). I changed it up just a bit and used regular butter instead of ghee, i also didn't use the onion seeds and next time i will be careful to add 1 tsp. salt to the dough.
     
  3. Wonderfully soft, tasty naan!! I used the milk option and used onion powder instead of the onion seeds (I didn't have any). I did all the mixing and kneading in my Kitchenaid mixer and had to add a couple of extra tablespoons of flour since I wasn't working more in by kneading on a floured surface. I divided the dough into 4 pieces and they were the perfect size. Thank you so much for sharing this recipe. I will be making these often!
     
  4. These naan were very good. I let the dough sit for 10 minutes after seperating it into six parts. I spread the naan out with my fingers instead of rolling them out, and I sprinkled sesame seeds on half of them. Delicious!! Will definately be making these again! Thanx.
     
  5. Wonderful! On my first try I used wholemeal flour and they didn't puff up--but tasted ok as flat breads. Husband said they tasted good & he knew they were healthy, so... But 2nd time around I used all purpose white flour, butter instead of clarified butter, and (feeling adventurous) divided dough into 2 batches and rolled some chopped garlic into the 2nd batch. They were great!!! (Under my oven grill they took 1 min 30 seconds each side)Husband said they tasted better (!) than the ones from the Indian Restaurant so Thank You, Charishma Ramchandani!
