"I think this is a Hungry-Girl recipe but I'm not 100%. Great tasting low cal alternative to regular nachos and cheese. Be adventurous and try it-I bet you'll love it!"

  • Peel and slice cucumber.
  • Put 1 teaspoon salsa on each slice of cucumber.
  • Top with shredded cheese.
  • Put slices on paper towel and microwave for approximately 15 secs or until cheese begins to melt slightly.
  • Very delicious, quick, and delicious!

  1. haha, wow I loved this... Great idea on how to spice up some cucumbers (and lighten up nachos!) This might be weird but I salted the cucumbers just a touch before adding the other ingredients... I don't know, maybe just to make them taste more like chips? It was good though!
