  1. Preheat oven to 350 degrees Farenheit.
  2. Set aside a 4 qt oven-safe dish. Over medium high heat, melt 1 cup of granulated sugar in a metal pot.
  3. When it has become dark caramel brown and bubbly, pour into 4 qt dish.
  4. Combine evaporated milk, condensed mil, eggs and vanilla and stir to combine well. If you whisk mixture, tap bowl on countertop to release any air bubbles.
  5. Pour mixture into 4 qt dish over the caramel.
  6. Place dish into a pan and pour boiling water into that pan until it comes halfway up the sides of the flan cooking dish.
  7. Bake for 1 1/2 to 2 hours at 350 degrees, until set.
  8. Cool on the countertop, then chill in the refrigerator.
