- 1 (1 lb) bag pinto beans
- 1 1⁄2 lbs chorizo sausage
- salt (to taste)
directions
- Rinse beans in cold water making sure they are all clean.
- Place beans in Medudo (stock) pot and fill with water.
- Bring to a rolling boil.
- Add raw chorizo and a little salt.
- Bring to a rolling boil.
- Cover and reduce heat to low.
- Cook for four to six hours, checking occasionally.
- If you need to add water, add hot water.
- Tast them to see if they need more salt, if so add some.
- Mash what you will use with a potato masher, freeze the rest unmashed.
- Enjoy!
