ingredients
- 3 cups sugar
- 4 large eggs
- 1⁄4 teaspoon ginger
- 2 teaspoons baking soda
- 1 teaspoon nutmeg
- 1 cup canola oil
- 2 cups canned pumpkin
- 1 1⁄2 teaspoons salt
- 1 teaspoon baking powder
- 2⁄3 cup water
- 3 1⁄2 cups flour
- 3 teaspoons cinnamon
- 1⁄4 teaspoon ground cloves
directions
- Add eggs to sugar and beat well.
- Add oil and beat.
- Add pumpkin and blend.
- Add the dry ingredients alternately with water.
- Pour evenly into 3 8 1/2 x 4 1/2 inch greased loaf pans.
- Bake 1 hour at 350 degrees.
- After cooling, loaves can be sliced, wrapped in foil, and frozen. To reheat, place frozen loaf in the oven at 350 degrees for 20-30 minutes.

My 3 year old & I just made this, Delicious! Easy recipe to follow, and it turned out perfect. I added a cinnamon-powdered sugar icing just for kicks, and I used pumpkin pie spice instead of individual nutmeg, cloves, cinnamon, & ginger. I probably used 1 1/2-2 teaspoons total of that, but then again the pumpkin pie filling I used was pre-seasoned. I just added the spice to taste because that's what I had on hand. It was still very good!
