Nan's English Muffin, Hummus, & Tomato Sandwich ( Ww )

"I started Weight Watchers again and wanted a filling breakfast or lunch. I made this up and love it so I thought I'd share. It's not really a recipe but a combo that is low in points. You could change the taste by adding spices like oregano, etc. on top for no points. The multigrain lite muffin from Thomas' is 1 point and it has 8 grams of fiber! It's so much healthier than what I usually eat! I am using the store bought Sabra brand garlic hummus from Costco and for 1 oz. (3 pts.) which is 2 tbsp. so I use only 1 for 1 1/2 pts. This is 2 1/2 points."

  • 1 light multi-grain English muffin, Thomas' brand Lite
  • 1 tomatoes, sliced
  • 1 tablespoon hummus
  • salt, to taste
  • pepper, to taste

directions

  • Split and toast the English muffin.
  • Spread the hummus on each half or the muffin and leave open-face (feels like more food that way).
  • Place tomato slices on top of the hummus.
  • Sprinkle with salt and pepper.

  1. I don't think bread is diet food but I am not weight watching. I made this as a snack but used organic brown rice cakes instead of an English muffin to be gluten free, I know the muffin would taste better. I may have used more hummus. I used plum tomatoes, sea salt and freshly ground black pepper. It was yummy!

  4. Wonderful! I made this today, but used sundried tomatoes instead of fresh. It was a perfect lunch! I was told once that you aren't supposed to calculate the fiber past 4, so doing that my muffin came out to be 1 point. I bought the Sabra hummus, but it wasn't from Costco and the point value was 1 point per tbl. and I used 2. The sundried tomatoes are packed in oil, I drained them and patted them dry on a paper towel and they were 2 points for 1/2 an ounce, which I used. So, my points came out to 5 which I thought was still good for the taste value. I buy the sundried tomatoes from costco and they are fabulous if you want to try it with them...but I warn you, you might not go back to the fresh tomato! Finding good healthy things that fit into the diet are really hard sometimes, so I am thankful that you posted this. I will be making it a lot!
     
  5. I love adding hummus to lots of things, and it gives so much flavor here. I found a hummus called Oasis brand that has fat free and the calorie count is very low, exp: anywhere from 11 calories for a black bean dip per 2 tabs to 22 or so calories per 2 tabs depending on which flavor. I think it is great. So I use two tablespoons here.I add an egg to this and even more veggies, mushroom, spinach etc. What ever is around. Good as written without egg too.
