  • Combine cranberries, walnuts and 1/2 c sugar. Spread evenly into a 10" pie plate or springform pan.
  • Combine remaining sugar with remaining ingredients; beat until smooth. Pour over cranberries and walnuts in pie plate.
  • Bake in preheated 350F oven for 40 minutes.

  1. Awesome cranberry pie. I used gluten free flour but otherwise followed the recipe to the letter, and it turned out beautiful. Quickly and easily made, and utterly delicious. Thanks for sharing, I'll make this again often.
     
  2. Delicious, and easy to make, even my DH who says he doesn't like cranberries enjoyed it. I bought extra cranberries to keep in the freezer just for this pie, because the stores don't seem to carry them after the holidays.
     
  3. I got this recipe from a friend many years ago, and it's become a family favorite. I make it every Thanksgiving, and my son also requests this for his birthday instead of a cake. I leave the cranberries whole rather than chopping, and my recipe says that it's best to freeze the berries first, so I always have. It's so yummy served warm, with a big scoop of vanilla bean ice cream!!

I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
