- 1⁄2 cup soya sauce
- 1⁄2 cup mirin
- 2 tablespoons sugar
directions
- Pour into a pan, and simmer until sugar dilutes.
- Let cool and keep in fridge until needed.
- This has a"watery" consistency.
- Heat and drizzle on your favorite meat.

This is a true, classic teriyaki sauce for some very specific reasons. First, it does not include ginger or garlic, peppers, mustard, or chili, or fruit purees or massive amounts of juice. Second, this recipe DOES include mirin, which is the basic definition of a teriyaki sauce. While other recipes might be classified as an Asian marinade or brushing sauce, this is a true and classic teriyaki sauce that we use often for chicken, beef, fish, and tofu. If you want to increase the stickiness of the sauce, you can add a teaspoon of cornstarch to a couple of tablespoons of cold water and gently simmer it for a few minutes.
