- 4 (4 ounce) packages cornbread mix
- 2 (10 ounce) boxes herb-seasoned stuffing cubes (Mrs Cubison's)
- 1 (16 ounce) bag herb stuffing mix
- 1 tablespoon poultry seasoning
- 6 slices bacon
- 2 cups celery
- 1 bell pepper
- 1 cup onion
- 1 bunch green onion
- 2 bulbs of garlic
- 1⁄4 cup parsley
- 1 (10 1/2 ounce) can cream of mushroom soup
- 1 (10 1/2 ounce) can cream of celery soup
- 4 (14 ounce) cans chicken broth (7 cups)
directions
- make cornbread and crumble in very large bowl. add all stuffing mix and cubes, poultry seasoning. Fry six slices bacon; drain (reserve drippings) crumble bacon and add to bread bowl. chop celery, bell pepper, onions and garlic and fry in bacon drippings till tender crisp; add to bowl. Mix soups and 2 cans of broth in a small bowl until blended; stir into bread mix. Continue to add broth until desired consistency is achieved.
- SPOON INTO LARGE TURKEY ROASTER OR LASAGNA PAN, COVER WITH FOIL AND BAKE AT 350 DEG. FOR 30 MINUTES; REMOVE FOIL AND BAKE 20 MINUTES MORE OR UNTIL BROWN ON TOP.
