Nearly Normal Gluten-Free Flour Mix

"I found this recipe in the Thanksgiving edition of the Illinois Times, when Kim O'Donnel 'caught up' with the author of 'Normal Cooking for Gluten-Free Eating. After having success with many of the gluten-free all-purpose flower mixes from the 'zaar, I can't wait to try this one and hope it helps others. On a seperate note, The columnist does say the products using this flour are grittier than gluten-containing flours; I think that is typical of gluten-free baking. Nonetheless, enjoy!"

  1. I've been gluten-free for nearly 26 years. A friend shared a copy of the recipe with me about 10 years ago and this flour mixture has returned the possibilities for me to re-create family traditional recipes throughout the years and especially for the holidays. This flour mix is absolutely a 1:1 substitute for regular wheat flour. I've used it in pie crusts, nutmeat bread (my grandmother's recipe), turkey pot pie (my husband's grandmother's recipe for a turkey and dumplings variation), chocolate covered cherry cookies for Christmas, and has opened up options for so many of my family favorite recipes I thought I could never re-create when I had to go gluten free all those years ago. Thank you Courtney Elizabeth for "saving my Christmas".

  3. Made for Healthy Choices 2008 ABC . This makes a great flour mix. I used it to make a Texas Sheet Cake to take to work for my boss' birthday. It was devoured in no time. I'll most definitely use this again - I like the fact that it has xanthan gum already in it. Thanks for posting this flour mix Courtney!

Now recovering from my short career as a personal trainer, I am trying to find my career-self through attending school (again...) part time. If I'm not there, I'm in the kitchen making a mess (and usually some food, too...). My most recent obsession is the 'zaar. I am slowly stretching my cooking/baking legs and getting creative in the kitchen. Once a follow-every-step-to-a-tee type-cook, my right brain has taken over and cooking has become my creative outlet. I get a great sense of accomplishment from my time in the ktichen. The love of my life is a shepherd-chow mix that is always at my heels in the kitchen, hoping to catch a few dropped goodies.
