  • 10 rice paper rolls
  • 5 cm length cucumbers, washed, deseeded and sliced super fine
  • 12 a medium carrot, peeled and finely grated
  • 3 spring onions, sliced on the bias finely
  • 12 a red capsicum
  • 1 tablespoon Thai sweet chili sauce
  • 100 g cooked and shredded chicken
  • 2 tablespoons Thai sweet chili sauce
  • 1 teaspoon strong soy sauce

  • Combine all but the last two ingredients in a bowl.
  • Prepared the rice paper rolls as per instructions.
  • Roll into small parcels and dip in the sauce made of the lsat two ingredients.
