  1. In large saucepan bring to a boil sugar and water.
  2. Boil for 10 minutes then cool completely.
  3. Add next 4 ingredients.
  4. Place 2 scoops vanilla ice cream in tall glass.
  5. Pour approximately 1/2 cup nectar syrup over ice cream.
  6. Fill remainder of the glass with chilled sparkling water.
  7. Refrigerate unused nectar.
