  1. Cook the potato in water.
  2. While the potato is still warm,mash it and stir in the sugar and vanilla.
  3. Mix well and then add the coconut.
  4. Press mixture into a buttered pan.
  5. Cool and cut into squares.
  6. Dip the squares into melted chocolate and place on waxed paper to set.
