Neptune Salad

"An easy and healthy salad perfect for a light lunch, or as a side-dish for barbeques. This salad is best when eaten within a few hours of making because it gets dry when it sits for too long, in which case, just add some additional dressing."

  1. Delish!! I didn't have everything the recipe called for so I used whatever was in the fridge and it turned out great!. Instead of green onions I used 1/2 chives and 1/2 red onion. Instead of cherry tomatoes I used one whole roma tomato seeded and roughly chopped. I also used homemade low fat ranch, extra garlic power, farfalle pasta (bowties) and about 10oz of Tuna. My Boyfriend loved it. It v. simple to make and the veggies can easily be changed seasonaly. Thanks!

I am a single gal, living on my own; currently working as an Occupational Therapist & living in Cumberland, MD. (It is "God's Country" out here...beautiful!) I LOVE to cook and bake, and love anything that looks, tastes, smells, or even closely resembles a veggie. I LOVE moo-cows, and therefore, cannot bring myself to eat any part of the adorable critters (i.e. NO RED MEAT!!) I love the outdoors, and pride myself on being the master griller on the fire pit. My mother's side of the family is 100% Polish, so I have an inborn passion for cooking...unfortunately, along with that comes a love of eating, too!! But, hey..u only live once, so I say "EAT, DRINK, and BE MERRY!!!"
