  1. Preheat the broiler.
  2. In a bowl, mix the chicken with salt and pepper to taste and the poultry seasoning.
  3. Form 4 thin patties.
  4. Preheat one large and one medium-size skillet over med-high heat.
  5. Add about 2 tablespoons oil to each skillet.
  6. Place the chicken patties in the large skillet and cook for 5 minutes on each side.
  7. Meanwhile, add the onions and apples to the second skillet, season with salt and pepper, and cook until tender, 6-7 minutes.
  8. Place a chicken patty on each English muffin bottom and top with some of the apples and onions and 2 slices cheese.
  9. Slide them under the broiler for a minute or two to melt the cheese.
  10. Spread each muffin top with a tablespoon of honey mustard.
  11. Top chicken patties with a handful of watercress, set the muffin tops in place, and serve with a few chips.
