New Mexico Pecan Bars

2-3 dozen bars
ingredients
- 1 cup flour
- 1⁄3 cup firmly packed brown sugar
- 1⁄4 cup butter, softened
- 1⁄4 cup chopped pecans
- 1⁄4 teaspoon baking powder

Topping
- 1⁄4 cup firmly packed brown sugar
- 2 tablespoons flour
- 1⁄2 teaspoon salt
- 3⁄4 cup corn syrup
- 1 teaspoon vanilla
- 2 eggs
- 3⁄4 cup chopped pecans
directions
- Preheat oven to 350°F.
- In large bowl, combine first five ingredients, mix at low speed until crumbly. Press crumb mixture into ungreased 13x9- inch pan.
- Bake 10 to 12 minutes until light brown, remove from oven.
- In same bowl, combine all topping ingredients except pecans, beat at medium speed until well blended.Pour over partially baked crust. Sprinkle with pecans.
- Bake 20-30 minutes until golden brown.
- Cool, cut into bars.

These are really wonderful! At the time I made them, the ingredients listed "14 cups" of butter! I didn't quite believe it, so I guessed at 1/4 cup butter. Not sure if the butter ratio was correct or not, but the pan would have definitely benefitted from greasing, as it was a trick to get them out of the pan! Thanks, SaraBeelle9475! Well I should start off by telling you that i would have no idea what this website would be without my Nana AKA 'Julie B's Hive' telling me about it. I guess you could say I've inherited her joy for being in the kitchen and and also the excitement of other people enjoying what I can conjure up.
Cooking in the oven comes more naturally to me then on the stove top, although I'm trying to become better at it but it doesn't usually seem to work out. I love to try using new foods in things I make but usually find myself sticking to the everyday ordinary 'stuff' because I'm more accustomed to it.
My father is a wonderful cook and an even better BBQer. we usually have what we call a winter BBQ when he gets to go freeze so we can have something to tie us over until summer when we gather at my Nana's to have our family get together's.. even though most of the neighborhood kids end up there as well :P my sister is also amazing when it comes to food. when i need help with anything if Justus cant fix it I ask Nana, and if Nana can't, it's hopeless lol
