New Pioneer Potato Salad Vinaigrette

"I bought this potato salad in the deli section at New Pioneer Co-op and loved it! This is my attempt at recreating it using the listed ingredients. It's good hot or cold but it is very vinegary - if you don't like vinegar as much as I do, then definitely cut back! I think it's best to make it while potatoes are hot, and then refrigerate everything together to let the flavors blend."

  • Wash and cut potatoes into bite-sized pieces (don't peel unless you want to). Add to salted boiling water and cook until soft (I put in the crockpot on high with water for the afternoon). Drain water and set aside.
  • Chop green onion, using white and green parts. Chop basil and parsley leaves. Set aside.
  • To make dressing, whisk vinegar, oils, and sugar together. Add onion, herbs, and salt and pepper to taste.
  • Drizzle dressing over potatoes, stir well. Serve or refrigerate.
