New Pioneer Potato Salad Vinaigrette

- 1 lb yukon gold potato
- 3 -4 green onions
- 1⁄2 cup white wine vinegar
- 1⁄8 cup extra virgin olive oil
- 1⁄8 cup canola oil
- 2 tablespoons sugar
- 1 bunch basil
- 1 bunch parsley
- kosher salt
- black pepper
directions
- Wash and cut potatoes into bite-sized pieces (don't peel unless you want to). Add to salted boiling water and cook until soft (I put in the crockpot on high with water for the afternoon). Drain water and set aside.
- Chop green onion, using white and green parts. Chop basil and parsley leaves. Set aside.
- To make dressing, whisk vinegar, oils, and sugar together. Add onion, herbs, and salt and pepper to taste.
- Drizzle dressing over potatoes, stir well. Serve or refrigerate.
