  • Heat oil in heavy medium saucepan over medium heat.
  • Add onion; sauté until soft, about 4 minutes.
  • Reduce heat to low.
  • Add cream, cream cheese, Parmesan, and Gruyère.
  • Whisk until smooth, about 3 minutes.
  • Stir in nutmeg.
  • Season with salt and pepper.
  • Remove from heat.
  • Combine potatoes, 6 cups water and salt in large saucepan.
  • Bring to boil over high heat.
  • Reduce heat to medium and cook until potatoes are just tender when pierced with skewer, about 6 minutes.
  • Drain.
  • Transfer potatoes to bowl.
  • Add olive oil and parsley; toss to coat.
  • Season to taste with salt and pepper.
  • (Fondue and potatoes can be prepared 1 day ahead. Cover separately and refrigerate. Whisk fondue 5 minutes over medium heat until melted and smooth. Reheat potatoes in 350°F oven 10 minutes.) Place potatoes on platter.
  • Spear each with skewer (48 6-inch skewers).
  • Serve with warm fondue.

  1. awesome fondue! came together super easy and had great flavor. I actually skipped the potatoes this time because I was looking for just a good fondue recipe to serve with chunks of French bread, lil' smokies, and cherry tomatoes. It worked really well for just that!
     
  2. We roasted fingerling potatoes, toasted up some old buns, and cubed up apples - a very nice treat on New Year's Day
     
  3. Yum, yum, yum... This cheese sauce is sooooo good. We also dipped bread cubes and lightly steamed broccoli and cauliflower into the cheese sauce. It was wonderful! I took the suggestions of other reviews and roasted the potatoes so they would have a tougher skin and not fall apart on the fondue fork. Everyone loved this fondue. This is definitely going into my recipe box! Thanks so much for sharing.

  5. Made this for our new grandson's, Max, Meet and Greet. Served with baby potatoes from Trader Joes that I tossed with a little olive oil and kosher salt and roasted until done, and cubes of French baguette. OMG!!!!! This was the star of the party! I am not a big cheese person, but I could eat this with just about any other veggie, maybe cubes of ham, maybe with a big piece of cardboard? Seriously, this is THAT good! I did have to thin mine down a little more with a little milk, as it was verrrry thick. Thanks, Mimi, for an awesome taste experience! If I could give you 20 stars, I would!

Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village. Just in case my employer comes here, please don't ask where I am from, or I'll be sacked like the last nanny was. ;-) I take care of 4 gorgeous, and darling kids. 3 girls and a boy. The boy is the youngest (and my favorite). They are great children, very, very active. (Hyper) I love to cook. I guess that's a given, why else would I be here. Part of my job is also to prepare meals for the family. The more they like my food, the longer I get to stay. (just a little joke) On my day off, I usually go out to the cinema or some dance clubs with the other au pairs in this town. That's about it I think.
