Nif's Mini Crustless Quiches

"This is a recipe that my Mom gave me years ago and it's great at a party. You can substitute ham, tuna or baby shrimp for the crab. Feel free to add sauteed mushrooms, peppers, or other veggies. Just be sure to dice everything quite small. Enjoy!"

  • Preheat oven to 350°F Spray mini muffin tin with nonstick spray.
  • Mix all ingredients in a bowl.
  • Fill each cup 2/3 full with mixture and bake for 15-20 minutes, until set.

  1. This was quite good - to be honest, I've never had quiche with crab in it before, so it was quite a pleasant surprise. DH was quite pleased with these as well. I made in ramekins like some of the other reviewers, baking 20 minutes, which was perfect. I made using GF crackers instead of the ritz, and that worked out just fine. I served this with a lovely tomato/onion salad and it was perfect! I will definitely make these again, as they were really quick and easy, and the ingredient list is not so long that it takes forever to get these in the oven! Thanks for posting Nif - we're taking the left-overs for lunch. Made for the Herbaceous Curvaceous Honeys, ZWT8 - France.
     
  2. Made this as an appetizer, just to serve two, baked in mini ramekins for about 20 minutes. This was perfect to use up some canned crab I had. Super easy and really tasty. Drizzled a little truffle oil on. Didn't use cheddar cheese, but a young goat Gouda from Holland, that I adore and it worked so so well. Thanks Nif for posting! Made for ZWT 5
     
  3. These were very easy to make and tasty too. They seemed a little like fancy scrambled eggs more than quiche, but still very good, and a great way to serve an appetizer. We had it as a main dish, and about 4 mini quiches was a good serving size. Made for Photo Tag.
     
  4. Wonderful! I used tuna and had to sub chives for the green onion. I halved the recipe since it was only 3 of us and wish I didn't! DD likes them so much she wants them for her lunch tomorrow. This is headed to my tried and true cookbook!
