Nif's Penne With Feta

- 1 lb penne, cooked as directed (I prefer Smart pasta as it has more fibre than whole wheat and has a great texture)
- 2 teaspoons olive oil
- 1 garlic clove, minced
- 1⁄4 cup onion, finely chopped
- 1 (28 ounce) can tomatoes, diced, drained
- 1⁄3 cup black olives, sliced
- 6 ounces feta, crumbled (can use low fat)
- 1⁄4 cup fresh parsley, chopped
- 1⁄4 cup fresh basil, chopped
- 1 teaspoon thyme, dried
- parmesan cheese, grated (optional)
directions
- Heat oil in large pan over medium heat. Saute garlic and onions until onions are semi translucent.
- Add tomatoes to garlic and onions and heat through.
- Add olives, feta, parsley, basil and thyme to pan and toss.
- Pour mixture over pasta in serving dish and toss again. Sprinkle with parmesan (optional).

Can we say fast? The sauce is made and waiting when the penne is cooked. As the last reviewer said it certainly can lend it's self to many translations. I almost salted the sauce before I remembered the feta addition. I'm sure glad that I thought in time. It certainly needs no additional salt. The fresh basil is marvelous.

A very tasty pasta dish which two of us enjoyed for today's lunch and which I plan to use for take-to-work lunches over the next two days. I used 3 cloves of garlic and added a leek, which I thinly sliced, and a tablespoon of lemon juice (added in step 2). I used kalamata olives and low-fat feta. I wanted to add another vegetable, so added one of my favourites which I always have a good supply of in the fridge: baby spinach leaves. Great blend of flavours. This recipe is very versatile so any such additions - depending on what you have on hand - would probably work really well. Loved the blend of herbs in this. Thank you for sharing this recipe, Nif; it's certainly one I'll make again. Made for 1-2-3 Hit Wonders.

I love great food and I particularly like trying cuisines new to me! Although I don't prepare as much food as I used to, creating in my kitchen is still one of my favourite things to do. Enjoy!
