Ingredients Nutrition

  • 3 lbs sirloin, cut into bit sized pieces (Any braising type beef will do)
  • 2 quarts beef stock
  • 6 carrots, peeled and cut into chunks
  • 3 large celery ribs, cut into chunks
  • 1 large onion, Use more if you like. DH does not like onion, so I keep the amount smallish
  • 1 lb kale, stem removed and cut into 1-inch pieces
  • 1 lb collard greens, stem removed and cut into 1-inch pieces
  • 2 springs rosemary
  • 1 tablespoon thyme
  • 2 teaspoons salt, approx
  • 23 cup wild rice
  • 3 tablespoons balsamic vinegar
  • 1 cup sour cream

Directions

  1. Place all ingredients, except Balsamic and Sour Cream, into crockpot.
  2. Cook on Low at least 8 hours.
  3. Remove Rosemary springs, add Sour Cream & Balsamic, adjust salt and serve.
