Nina Y's Carrot Soup

ingredients
- 2 lbs carrots, peeled and cut into chunks
- 1 medium onion, thinly sliced
- 2 garlic cloves, chopped
- 3 tablespoons rice, uncooked
- 3 tablespoons tomato paste
- 5 cups chicken broth or 5 cups stock
- 1⁄4 cup butter
- 1⁄2 teaspoon ground ginger
- salt or pepper
- milk or cream
directions
- In large pot, carmelize onions in butter.
- Add garlic and carrots.
- Saute for a couple of minutes.
- Add chicken broth/stock, rice, tomato paste, ginger, and salt and pepper.
- Bring to a boil, then cover and simmer for 30 minutes.
- Puree in either blender, in batches or use an immersion blender.
- Add milk/cream, if desired, to taste.

Live in central Oklahoma. I am very happily married (10 yrs 6/5/00) and have 1 son and a DDIL I love to cook and to bake; however, my DH is a finicky eater, if it's not meat and potatoes, he won't eat it. His line is "I'd rather drink my own bath water". LOL but my DS and DDIL love my cooking, especially my shrimp recipe which is one I got off of zaar!!! It was a hit at the wedding rehearsal dinner.
I am coming up on the eighth anniversary of my liver transplant - July 5th. I can never thank my donor's family enough for the wonderful gift I received. Please be an organ donor. It is the most unselfish act that you can ever give.
