Nindsy's Best Potato Casserole

"I got this recipe over at the TOH website. It's very popular there because it is a company dish that is so good and so easy. No one can believe it is so simple. The potatoes pair well with any meat...ham, meatloaf, grilled meats, etc. Or add them to your brunch buffet. You will want to make more than you think you should as this goes FAST, says Nindsy who calls this her very best recipe. You can make this with half-and-half but the taste is not the same."

  • 1 (32 ounce) bag shredded hash browns (Mr. Dell's suggested)
  • 1 pint whipping cream (2 cups)
  • 1 teaspoon salt
  • pepper

directions

  • Preheat oven to 350 degrees F. Butter a 9x13-inch baking dish.
  • Pour potatoes in prepared baking dish Pour cream over. Sprinkle on the salt and pepper.
  • Bake uncovered in preheated oven until potatoes are glazey and slightly brown on top, about an hour (experiment the first time!).
  • NOTE: Nindsy adds this note to her recipe: "You owe it to yourself to make this with cream the first time. You will be tempted to add onion and maybe cheddar cheese on top, but again, I urge you to try it once with only the cream. To die for!".

  1. I'm expecting my first child and had friends over to visit & spend the night. In the morning I needed to feed them something fast, easy and ideally, something I could eat too (onions and garlic don't mix so well for me right now!) This dish was Perfect! Everyone loved it and I was even asked for the recipe. This will be a common dish in my house from now on. I can't wait to try other combinations (once my stomach allows!)
