No Fried Carnitas

- 5 lbs pork butt (shoulder)
- 1⁄2 onion
- 2 garlic cloves
- 1 (12 ounce) can Coke
- 1 cup orange juice
- 3 bay leaves
- salt
- pepper
- 1⁄2 - 1 cup water
directions
- Trim the fat from the pork (reserve the fat).
- Cube the pork.
- Cook fat until it releases enough grease. Take out the fat.
- Turn the stove to high and add pork to the grease. Cook until lightly seared outside.
- Add all ingredients. Only add enough water to barely cover the top of the pork. Bring it to boil for 5 minutes.
- Cover and lower the temperature to simmer.
- Stir occasionally. Cook until all liquid has evaporated and the outside of the pork is caramelized. Pork should separate very easily at this point.
- Serve with Mexican rice or make your favorite taco & burritos with it.
