No Fried Carnitas

"I got this recipe from the manager at work. Instead of frying the pork, this recipe calls for searing the pork in its own grease (only a very small amount of grease is required) and it's a much easier alternative. It is a bit on the sweet side so you may want to adjust accordingly."

  • Trim the fat from the pork (reserve the fat).
  • Cube the pork.
  • Cook fat until it releases enough grease. Take out the fat.
  • Turn the stove to high and add pork to the grease. Cook until lightly seared outside.
  • Add all ingredients. Only add enough water to barely cover the top of the pork. Bring it to boil for 5 minutes.
  • Cover and lower the temperature to simmer.
  • Stir occasionally. Cook until all liquid has evaporated and the outside of the pork is caramelized. Pork should separate very easily at this point.
  • Serve with Mexican rice or make your favorite taco & burritos with it.
