No Meat Lasagna Just for Aaron

“My son has become a vegetarian, so we have been eating more meatless meals of late. He loves lasagna, but doesn't care too much for the ricotta/cottage cheese additions, so I came up with my own version. The basil paste I use is Gourmet Garden brand, found in the refrigerator section in the produce department.. Cooking time includes 20 minutes standing time.”

Directions

  1. Bring a large pot with salted water to a boil.
  2. Add noodles, lower heat to low and cook for 12 minutes.
  3. Drain.
  4. In large pot, heat butter/oil.
  5. Add onions/peppers.
  6. Saute until onions are tender.
  7. Add garlic and heat until fragrant.
  8. Add tomatoes, basil paste and bring to a boil.
  9. Add tomato paste and stir to combine.
  10. Lower heat to medium and simmer 20 minute.
  11. Remove from heat.
  12. Taste for seasonings.
  13. In the bottom of a 9x13 pan spoon some of the sauce.
  14. Place 3 of the noodles over.
  15. Spoon more sauce to cover.
  16. Sprinkle 1/3 of mozzarella and Parmesan over.
  17. Repeat layers, ending with sauce and remaining cheese.
  18. Bake in 375 degree oven covered with foil for 30 minutes.
  19. Uncover and bake for an additional 30 minutes.
  20. Remove and let stand for 20 minutes.
