No Meat Lasagna Just for Aaron

"My son has become a vegetarian, so we have been eating more meatless meals of late. He loves lasagna, but doesn't care too much for the ricotta/cottage cheese additions, so I came up with my own version. The basil paste I use is Gourmet Garden brand, found in the refrigerator section in the produce department.. Cooking time includes 20 minutes standing time."

  • Bring a large pot with salted water to a boil.
  • Add noodles, lower heat to low and cook for 12 minutes.
  • Drain.
  • In large pot, heat butter/oil.
  • Add onions/peppers.
  • Saute until onions are tender.
  • Add garlic and heat until fragrant.
  • Add tomatoes, basil paste and bring to a boil.
  • Add tomato paste and stir to combine.
  • Lower heat to medium and simmer 20 minute.
  • Remove from heat.
  • Taste for seasonings.
  • In the bottom of a 9x13 pan spoon some of the sauce.
  • Place 3 of the noodles over.
  • Spoon more sauce to cover.
  • Sprinkle 1/3 of mozzarella and Parmesan over.
  • Repeat layers, ending with sauce and remaining cheese.
  • Bake in 375 degree oven covered with foil for 30 minutes.
  • Uncover and bake for an additional 30 minutes.
  • Remove and let stand for 20 minutes.
