No More Dry Chicken Chicken

"My neighbor Steve and his girl were experimenting with a baked chicken recipe and came up a little gem I think. It creates for a really moist chicken without using a brine but with almost the same results. Hope you enjoy it much as we did. If you eat legs and wings with your fingers...have some napkins handy. *s*"

  • Preheat oven to 350 degrees.
  • Mix first 3 ingredients in sauce pan.
  • Heat until butter melts.
  • Remove from heat and stir in orange juice.
  • Place water in baking dish before the chicken.
  • Place chicken in baking dish and pour sauce slowly over entire chicken.
  • Bake for approximately 1 hour and 15 minutes basting chicken 3 times during the first hour.
  • Chicken may be stuffed if desired.

The meat is so tender and moist, and we really liked the flavor of the sauce. I did use fresh lemon juice, but added orange zest to it...gave the chicken a nice added zing!   5. This Recipe was quite easy to make, and Turned out great! My picky partner ate most of it even after she scoffed at the orange juice/ chili powder she saw me put in. The Chicken was one of the moistest I've eaten without brining, and super easy!

Tweaks

  1. I really enjoyed the taste of this and so did my boyfriend. It was different but very tasty. I substituted brown rice syrup for the honey and I doubled the amount of sauce. I used a little bit less water and when it was done I added flour paste to the sauce to make a gravy to serve with the chicken. I'll be making this again and again. Thanks for a great recipe.

I’m over the hill and heading down the back side at a rapid rate it seems, single, and retired now. My loves? Good friends, most of all. After that I guess it would be wildlife and photographing it. In fact, I love anything that deals with wild animals and the outdoors. Then comes playing with my dog and making a mess trying to cook in the kitchen or around the fire pit, grill or smoker while enjoying a good tumbler of whiskey (whisky).
