  • combine ricotta cheese, romano cheese, basil, oregano, parsley and pepper in a large bowl -- stir well --
  • lightly spray a 13x9" baking dish with non stick spray.
  • Layer in half of the following; zucchini, ricotta cheese mixture, eggplant, pasta sauce and 1/2 cup mozzarella cheese.
  • Repeat layering, ending, pasta sauce and 1/2 cup cheese.
  • bake at 375* for 40 minutes.
  • remove from oven and top with remaining cheese.
  • Bake for an additional 5-8 minutes until cheese is melted and golden.
  • let stand 15 minutes before serving.

I love cooking, and reading Christian fiction..I have 5 grandchildren..4 boys and 1 spoiled granddaughter...I also have a black cocker spaniel named Tobey..who is very spoiled..Love computer games, cross stitch and reading cookbooks..I was diagnosed with Acute Myeloid Leukemia almost a year ago, on September 26, 2005....was in an out of the hospital for 8 months, doing intensive chemo...I am doing well now, thanks for all the prayers...
