No-Salt White Bread

"Very simple white bread recipe for breadmaker (if you're clever you can adapt for oven!) Whole wheat flour could be substituted. This is originally a medieval Tuscan recipe, created by peasants who couldn't afford the high taxes on salt. Perfect for those of us on low-sodium diets!"

  • Combine water and sugar, dissolve sugar.
  • Add yeast to sugar water.
  • Put flour, yeast mixture and olive oil into breadmaker.
  • Start the breadmaker, with a plain or French loaf setting on your machine.
  • When ingredients are almost completely combined (about 5 minutes in), add egg white.
  • Allow breadmaker to complete baking.

  1. Help! I am such a ditz brain! I forgot to put the paddle in the bread machine, so when I went to put the egg white in, nothing was mixing. I pulled everything out, and put the paddle in, and put all of it back in there. It did lose eight minutes of mixing time though. I just checked on it, it looks like a ball of dough. Hopefully it will be edible. What do you think? My bread machine doesn't have a function where you can start the cycle over.
     
  2. Has anyone every tried a low salt recipe that is gluten free or with Bob's Red Mill 1 for 1 Baking Flour?
     
  3. Should be called no salt added since there is salt in the yeast.
     
  4. You call it no salt yet its still have salt in it from the yeast you use. How about calling it no salt added
     
  5. Can I add black pepper and garlic powder to enhance flavor?

  2. This was a very good and easy recipe!! Following the instructions was easy too. While the machine is mixing all the ingredients together, I do use a spatula to scrape around the sides so that it adds to the mixture. My husband must adhere to to a very low restricted sodium diet for health reasons, so I was very happy that he really likes this bread and that it was easy to make.
     
  3. Very nice result first time out. "Winged it" on converting to oven bake. Mixed ingredients by hand adding egg white last. Let rest 2 hrs covered, punched down, kneaded, then 40 minutes more. Into 375 oven for about 40-45 minutes, testing w/ toothpick. Product firm but not too dense, good grain. Next time I'll try it with some Spike non-salt seasoning added.
     
  4. This was a very nice bread, easy to make and a wonderful addition for anyone on a low sodium diet!
     
  5. No offense, but if I wanted a bread machine recipe I'd look on the box. And as other reviewers have said, yeast contains salt, and, as far as I know, it is very difficult to make bread without salt. Please edit the title to reflect that reality so that people who cannot have salt don't get hurt. Thank you!
