"no-Time-Flat" Nuked Nachos With Salsa and Cheese

  • 1 (16 ounce) can refried beans
  • 12 - 34 cup sour cream
  • 34 - 1 cup salsa
  • 1 12 cups cheddar cheese (or to taste) or 1 1/2 cups Mexican blend cheese (or to taste)
  • 2 cups yellow corn tortilla chips (or as much as you can pile in the middle!)

  • With a large spoon, spread out the beans in a ring on a large microwave-safe dinner plate, leaving about 4 inches in the center of the plate, (that's where you will put the pile of tortilla chips).
  • Smear the sour cream and then the salsa over the beans.
  • Sprinkle about half of the cheese over everything (as you pile on everything, make certain to leave the center of the plate empty).
  • Microwave on HIGH for 2 minutes.
  • Remove the plate from the microwave, pile the chips in the center of the plate.
  • Sprinkle the remaining cheese over the chips.
  • Return the plate to the oven and microwave on HIGH for another minute or until the cheese has melted.
  • Remove carefully as the plate will be hot.
  • Serve hot.

  1. We make these often without the beans and sour cream. It is usually a quick snack while watching tv. We serve the sour cream on the side if we have it. I also sprinkle on sliced black olives and sliced pickled hot peppers if we have them. Sometimes, we sprinkle on cumin for smoky flavor. You can add or subtract based on what you have, but the method is quick, easy, and always yummy!
     
  2. I loved this easy, quick recipe! The only things I did differently were:<br/>- Mixed the Salsa with the refried beans<br/>- Added a Layer of prepared Guacamole on top.<br/>- Heated (w/o Sour cream)<br/>- Dolloped cold Sour Cream on top.<br/>YUMMMY! Thanks for sharing Kittencal!

  4. Thanks Kittencal for posting. (I love her recipes!) This was super easy and good for a personal snack. For guests it wasn't the best. There was too much liquid and not enough chips. BUT KITTENCALSKITCHEN makes a mean Chili nacho recipe Recipe 138163 Recipe #138163. I made these both in the same week and I much prefer the baking over nuking. This one is made in no time flat so if you are in a hurry go for it. If you have time check out her other one. I would say these are snack shack type and the chili nachos are restaurant quality. It all depends on what you are looking for. Both are good. Enjoy! ChefDLH
     
  5. YUMMmmmm..this was great. I made my own refried beans, and it was still easy and quick. I love that everything is on the outside so the chips don't get soggy.
