Nonna's Easy Italian Bean Soup

ingredients
- 1 tablespoon olive oil
- 1 (18 ounce) can diced tomatoes
- 1 (18 ounce) can of mixed beans or (18 ounce) romano beans
- 1 (10 ounce) can tomato sauce
- 1⁄2 cup uncooked macaroni noodles
- 1 onion
- 4 garlic cloves
- parsley
- basil
- oregano
- salt & pepper
directions
- In a large saucepan, sautee onions and garlic in oil.
- Add diced tomatoes, tomato sauce, oregano, parsley, salt and pepper.
- Rinse beans and add to sauce.
- Let simmer for 10 minutes.
- While sauce is simmering, boil water and make pasta according to package.
- When ready, drain 3/4 of the water but leave 1/4 with pasta. Add to simmering sauce and stir in basil.
- Top with parmasan and serve!

I made only one insignificant change in this recipe, substituting as I did lemon pepper for the salt & pepper! Well, I did also use rotini instead of macaroni, but that's no big thing! This all came together very easily & made for a very nice mid-day meal! [Made & reviewed for one of my adoptees in the current round of Pick A Chef] Want to know more about PAC?
