Noodles and Corn Casserole

"A very filling side dish casserole, which can be cooked either in the oven or the crockpot. The recipe calls for 1/4 cup sugar, I like to use about half of that."

  • Preheat oven to 350.
  • Cook and drain noodles.
  • Add remaining ingredients.
  • Mix together and place in greased 2 quart baking dish.
  • Cover and bake for 30 minutes or until cheese is melted.
  • Note: Can also be placed in a crockpot on low for 2 hours.

  1. This is as close to the corn and noodles my mom would make as you can get. She would make it when ever we had baked chicken. One of my favorite comfort foods.
     
  2. I cut the sugar in half and used about 6 tbs butter. We loved it! I will definitely make again, but next time I might cut the sugar and butter down even more. Thanks!
     
  3. Easy tasty casserole. Subbed a different noodle, and used cheddar. Took the advice of previous posters and reduced the sugar, I liked the sweetness. Will reduce butter a bit next time as I found it a bit greasy. Wasn't sure what to expect, but I should have been able to figure out that it was sort of like macaroni and cheese with cream style corn added. Uncovered for the last 5 or 10 minutes to brown up a bit. Yum.
     
  4. Good Taste! I cut the recipe in half. I used 1/2 tsp sugar and 6 ozs of cheese. I used the oven to bake. This is a simple easy to prepare dish. Thanks for posting!
     
  5. I used shredded sharp Cheddar since we prefer it to American, and ended up with a couple of tablespoons more than 1/8 cup sugar, plus about a teaspoon of salt. This was good, but I felt it was more than just a side dish. I think next time I'll make it a main dish by adding some ham or vegetables.
