  1. Saute onion in olive oil in a saucepan over medium heat.
  2. Add tomato paste, chickpeas, and 1 cup of water, and allow to boil for 15 minutes.
  3. To cook vegetables, steam, sauce or boil until they are tender.
  4. To prepare couscous, add it to one cup of the tomato sauce and one cup of water and steam until it is cooked.
  5. To serve, place the couscous in a large bowl, pour any remaining sauce over it, and arrange vegetables on top.
