Northwoods Buttermilk Cake

  • Preheat oven to 350 degrees F & spray a 13"x9" baking dish with nonstick cooking spray, then lightly flour the sprayed surface.
  • In a medium bowl, whisk together flours, baking soda, cinnamon salt & nutmeg.
  • In a large mixing bowl, with an electric mixer on medium speed, beat margarine for 30 seconds, then add brown sugar & vanilla & beat until fluffy.
  • Add egg whites, beating well, then add applesauce, also beating well.
  • Add dry ingredients & buttermilk alternately to the large mixing bowl, blending well.
  • Stir in wild rice & pour into prepared pan.
  • Bake 45-50 minutes or until wooden pick inserted in center comes out clean ~ DO NOT OVERBAKE.
  • Cool on a wire rack, then slice & ENJOY!
