  1. Is it the cloves that make these Norwegian holiday muffins or what? I’m looking for authentic recipes to bake for our heritage organization auction happening soon. I’m Danish but anything Scandinavian works. These were delicious. I only made half a batch for now, but certainly will make the big batch to package up for high bids. (They do remind me of Morning Glory Muffins minus several goodies.)
     
  2. These are absolutely delicious. My niece made these for a school project on Norway and I didn't think I'd like them, but I was wrong! So good. And we followed the recipe exactly.
     
  3. These are delicious! I am diabetic so I used 2 cups Splenda and 1/2 cup sugar. I don't like raisins, so used dried cherries. Everything else the same. I do think the amount of fat (eggs and oil) could be cut to 3 eggs and 3/4-1 cup oil, since the apple helps keep these moist. I will experiment next time. I also think cardamom would be a nice addition, since it goes so well with apple, and is used in lots of Scandanavian desserts and breads. Thanks for posting this, and my Norwegian ancestors thank you :)
