Not Fried, Fried Ice Cream

"Can't remember where I found this recipe, but it's great for Mexican night, or Cinco De Mayo!! (New Note: If you use the new Special K cereal with cinnamon and pecans, this is REAL delicious! Add the sugar and not as much cinnamon, no butter, and you don't have to bake it! Very crunchy and SO DELICIOUS!!! I used about 1 1/4 C Special K.)"

  • Make 8 vanilla ice cream balls and freeze on wax-lined cookie sheet for about an hour.
  • Mix remaining ingredients and spread on a cookie sheet to bake at 350°F until crisp and golden.
  • (Cooking times will vary according to taste and oven temps.) Let cool.
  • Roll ice cream balls in the cooled mixture and refreeze for 2 hours more.
  • Serve with honey drizzled over each and enjoy!

  1. Was served this dessert at sweet sister's dinner. She drizzled carmel sauce over it - we loved the crunchy part so much that we even added that sprinkled on top.
     
  2. It is very hard to find a non-fried fried ice-cream recipe. This was very easy recipe and turned out super yummy! I used Honey Bunches of Oats with Almonds cereal and brown sugar instead of white sugar. I also drizzled chocolate syrup with the honey. Totally yummy and very simple!
     
  3. I thought these turned out so tasty! I ended up using honey bunches of oats for the cereal. (can't remember which flavor). And we drizzled caramel over the top. They turned out so good. I had cereal mixture left over and we ate it plain and on bananas later. Yummy

  2. I subbed fat free vanilla frozen yogurt and ICBINB for the butter, to make it a little more diet friendly for me! This is yummy! It's also great with a little chocolate syrup on top instead of the honey...or made into a banana split (as my fiance did!).
     
  3. This tasted wonderful. If you don't have time to freeze the ice cream into ball shapes, the topping tastes wonderful just sprinkling it over a bowl of ice cream. I used chocolate syrup instead of honey and thought that was really good as well.
     
  4. This is tastier and crispier than what I've had at the restaurants and easy on the budget rather than paying $3-4 for one serving. I used granular splenda instead of sugar and sprayed the cornflake mixture with the cooking spray like Oriana suggested and it turned out great. Watch the mixture closely in the oven to avoid burning. I think it took about 5- 6 minutes in my oven. I topped it with a little bit of honey, whipped topping, sprinkles at my son's request, and a maraschino cherry. Great make-ahead dessert. Ole!
     
  5. This was excellent. Tasted great and better than fried fatty icecream balls. NExt time I plan to make it even less fattening by using cooking spray over the cornflakes instead of butter and splenda instead of sugar to see how it tastes but otherwise I will use the recipe as is. I omitted the cinnamon and used nestle light n creamy strawberry and passionfruit icecream it was delish!
