Not so Universal Dipping Sauce (Iceland)

"*Kokkteilsosa* in Icelandic, this recipe from *Cool Cuisine* (Traditional Icelandic Cuisine) by Nanna Rognvaldardottir surprised me - mainly due to her intro: "This universal dipping sauce became popular in Iceland in the 1960s & is served w/chips, hamburgers, fried & deep-fried fish, fried chicken & other types of fast food. Some people even put it on their pizza." IMO this sauce is much more unique to Iceland than it is universal to anywhere in the universe! (Time does not include chill time) *Enjoy* !"

  • Combine 1st 5 ingredients, taste & season w/salt + pepper to taste pref. Refrigerate for 2 hrs to allow flavors to blend.

  1. Used but half of the Tabasco sauce suggested, & that was enough for my taste buds! Then I did a little bit of dipping (which was fine) before brushing some of it on top of several chicken breasts before baking them ~ Now THAT WAS OUTSTANDING! A very nice & very versatile sauce!   2. Just loved this on grilled bone in chicken thighs. I did add 1/2 tea of hot sauce to increase the flavor punch. Just brushed it on the thighs 5 minutes before removing from the grill.
     
  3. This was pretty good with our Tater Tot Casserole. I used on the tots rather than ketchup and the sauce has a nice sweet zip to it. Next time I will decrease the heat a little since my tastebuds are whimpy!! Made for Football Pool 2010 Conference Championship.
     
  4. I'm sorry to say this was just okay for us. Was not bad we just thought the mayo overwhelmed the taste. Made this morning, maybe it needs to be refrigerated overnight, will try it again tomorrow. Made for Football Pool 2010 Conference championship.
     
  5. Absolutely feel passionate about this little diddy of a recipe! A simple, ( but not simplistic taste) sauce that magnifies what ever you decide to accompany with it. In our case, I used some fresh shrimp, peeled them and dipped them right into the sauce. I had everything on hand, and didn't change anything. I did however; use the full amount of Tabasco sauce, but the mayonnaise, ketchup, and pineapple juice really do deflect any amount of heat that would come about. I hollowed out a small onion (peeling off all but the outer two layers of the onion wall) filling the onion inside with this sauce. This made a great little dish for dipping. Perfect with seafood, chicken, (as the previous reviewer suggests) and pizza as our author suggests. I suggest just putting in your thumb, and dipping from there. (although double dipping in this case may be considered in very bad manners). Go ahead, this will make your day, try it and see. Thank you twissis! Made for your Super bowl win February 2009.

I am devoted to the "More is Always Better Principle" & apply it liberally to bacon, butter & garlic. I can have ingredient issues due to availability here in Iceland & my DH is medically diet-restricted from some ingredients as well.
