Nova Scotia Maple Chicken

"Caution: Recipe calls for almonds; persons with nuts intolerance should exclude this ingredient entirely from the recipe. Chicken is tender; sauce can be poured over Sweet potato, rice, or orzo accompaniment. Serve with salad and/or other vegetables. Sauce is excellent over sweet potatoe or carrots; however this creates a very high sugar content; not suitable for diabetic diets. Persons with diabetes should not pour this sauce over their vegetables."

  • Over 400 F (200 C).
  • Remove skin from chicken pieces, and discard skin.
  • Place chicken pieces in a shallow 9 x 13 (3 litre) pan.
  • Mix remaining ingredients and pour over chicken.
  • Bake in 400F (200C) oven, uncovered, for 50 minutes, basting occasionally.

  1. my husband made salsa and then put it in a water bath for 20 minutes. He did not know about adding the lemon or vinegar for safety reasons. He has given the salsa out and I was wondering if I should contact them all and tell them not to eat it! or do you think it will be ok?

  1. I used bone in thighs for this simple and yummy recipe tonight. It's so easy to throw together and whilst it cooked, I made a cous cous dish (with bell peppers, blanched snow peas, craisins, preserved lemon, spring onion and toasted sesame seeds) and a tomato/onion salad to go with it. Thanks Elaine for another good recipe.
     
  2. This was exceptional and I will be making it again and again. It had such a nice flavor. I was worried that it might be too sweet, but it was not. Of course I used real maple syrup.
     
  3. Wonderfully different, I'll enjoy making this again and again, just as I relish each trip to Nova Scotia. The ingredients are always in stock in my pantry, so this is a delightful and easy variation for our "chicken, chicken, chicken" household. The friends for whom I made this tend to have *very* hearty appetites, so even though there were only 5 of us I doubled the recipe, using about 4 pounds of skinless, boneless chicken breasts and doubling everything else. The only change to the ingredients that I had to make was using dried orange peel in place of the lemon rind, since I was out of fresh lemons. I whipped up the sauce about 3 hours before we were to have dinner, and marinated the chicken in the sauce (in the pan, covered, and put in the fridge) until it was ready to go into the oven. There were *no* leftovers. :) Everyone raved about it, even the people who don't usually care for almonds. I will most certainly make this again. Paired with Recipe #159863, it made for a terrific, satisfying dinner. Thanks for sharing a wonderful recipe!
     
  5. The lemon and maple syrup make for a tasty sauce, I doubled the mixture and served with steamed rice and stir fry vegetables.
