  • Grease a loaf pan well.
  • Preheat oven to 325degrees F.
  • Cream margarine with sugar.
  • Beat in egg.
  • Add flour, salt, baking powder, milk, and bananas.
  • Pour into loaf pan.
  • Bake for about 1 hour.
  • Cool well and slice.

  1. Thanks for sharing this tasty bread Lynn, it was quick and easy to make with great flavor. The texture was light and dense at the same time. I had to cook it for over 1 1/2 hours and it was still a little undercooked, but it was great toasted, the flavor is outstanding. Made for ZWT7 for my friend.
     
  2. Made as posted using the amounts as listed. The bananas gave it a very good banana flavor and liked that it made for nice slices on the serving platter.
     
  3. Made for ZWT 4 African Dessert Challenge: For the 1 cup of sugar called for, I used 1 cup of corn syrup and decreased the 1 cup of milk to 3/4 cup of milk. I also used only three bananas,(that was all I had). Baked for 1 1/2 hours. It tasted great. Kids loved it. It wasn't really sweet like some banana breads are. Don't know if that was because of the corn syrup. Will make again with original ingredients. Thank you. The Mamma Mias!
     
  4. Made for ZWT 4. Great flavor! Based on Cookiedog's comments I cut back on the bananas -- used 1 3/4 -- 2 cups. My eggs were kind of small, so used two. Added the milk 1/4 cup at a time, and didn't use a full cup. Since I was using salted butter, used only 1/2 teaspoon salt. Also added some walnuts. Baked at 350 for about 55 mnutes. Very tasty! Thanks for sharing!
     
  5. I'm not leaving stars on this because it may have been my fault. I halved the recipe and cooked them in 2 mini loaf pans. I cooked them for 50 min. instead of an hour and did the toothpick test to check for doneness. The toothpick came out clean but unfortunately they were a bit gooey on the inside. The flavor was excellent however. I did make a topping for one of the breads using brown sugar, cinnamon, coconut and a small amount of chopped peanuts. This really added to the flavor. If I were to make it again, I would cut down on the banana just a bit. Please don't hesitate to give this recipe a try as I said, it was probably my fault! Made for ZWT 4 by a Jefe de la Cocina.
