- 2 cups basmati rice
- 1 teaspoon cumin seed
- 1 teaspoon ground coriander
- 1⁄2 teaspoon salt
- 3 3⁄4 cups water

- snipped chives
- fresh ground black pepper
directions
- Wash the rice in several changes of water. Drain. Place the rice in a 1-1/2 quart microwave safe dish; add the water. Microwave uncovered on high for 10 minutes. Add the cumin seeds, coriander, and salt. Stir well. Microwave uncovered on high for another 6-8 minutes, until the water has evaporated. Fluff with a fork. If desired sprinkle with chives and pepper.
