  • LOAVES:

  • Prepare 2 9x5-inch loaf pans by greasing and flouring. Set aside.
  • Preheat oven to 350°F.
  • In medium bowl mix together flour, soda, and salt.
  • In large mixing bowl, cream butter. Gradually beat in sugar; beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in chocolate. Alternately add flour mixture and buttermilk, beating after each addition. Mix in vanilla and nuts.
  • Pour into prepared loaf pans and bake for about 60 minutes, or until cake tester inserted in centers comes out clean. Cool 10 minutes; remove from pans and finish cooling on racks.
  • BITTERSWEET GLAZE:

  • Melt chocolate with butter in saucepan over very low heat, stirring constantly until smooth. Remove from heat and add salt. Alternately add sugar with water until of spreading consistency.
  • Top loaves with glaze. Garnish with chopped nuts, if desired.
