Nuttier Carrot Cake

"By using peanut butter in this recipe along with prepared, creamy polenta you will please any lover of a nutty flavor. The pineapple gives extra sweetness and makes this cake wonderfully soft and moist. This is quite a healthy cake and can be prepared the day before but you should make the frosting the same day."

  • Grind the baby carrots in your found processor.That should make about 2 cups of grated carrots.
  • Drain pineapple chunks and add.
  • In a large mixing bowl, combine dry ingredients and mix well.
  • Fold in carrot-pineapple mixture.
  • Pour into prepared 9x13-inch baking pan and bake at 350°F for 45 minutes.
  • For the frosting, blend all the ingredients until soft and shiny.
  • Cover the cooled of cake generously with the frosting.
  • Decorate with roasted peanuts.

  1. I'm giving this recipe 3-stars for creativity, however since I couldn't find "prepared creamy polenta" that didn't have garlic in it, I had to make my own. I made recipe #54029 which came out delicious, however I'm thinking that the parmesan cheese in the polenta did not mesh well with the ingredients with this recipe. I wanted to give this recipe no stars, but I can't get that feature to work, as I don't think this recipe should be faulted for using an ingredient that wasn't intended. Made for Hidden Gems Event.

Originaly from Austria i moved to Iceland in 2002 after a life long longing for this country i felt at home at once and now it is the place where i belong. I am living with my wonderful husband in a nice, bright flat in the subburb of our capital, Reykjavik. I love to cook and eat healthy and i mainly use whole grain. I do not use any ready made mixes and i try to keep the food i cook close to the ingrediants i used. I am an elementary school teacher but i work in a kindergarden now and i actually prefer that field.
