"This is a recipe I have altered from one of the GI Diet cookbooks. Great for a quick on-the-go breakfast or snack. Will keep for a few days at room temperature, if they aren't eaten first!"

  • Combine all of the dry ingredients.
  • Add margarine to the dry mixture until crumbly. Melting the margarine helps.
  • Add egg, vanilla, and water. Form into a dough.
  • Divide the dough into 16 bars, approximately 1/2 inch thick.
  • Bake at 350F for 15 minutes on a parchment-lined cookie sheet. Flip them over and bake for another 10 minutes.
