ingredients
- 2 cups quick oats
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup nonfat milk
- 1⁄2 cup egg substitute
- 1⁄2 cup unsweetened applesauce
- 1⁄4 cup brown sugar
- 1⁄4 cup raisins
- 1⁄4 teaspoon cinnamon
- 1 teaspoon vanilla
directions
- Mix oatmael and powder.
- Add remaining ingredients and mix well.
- Pour into sprayed 9" pie pan or sprayed muffin tins.
- bake 45 min at 350F.

When I was a kid I went to summer camp every year where baked oatmeal was my favorite breakfast. I searched for a recipe as an adult and it brought memories flooding back, my recipe, tho, calls for a huge amount of sugar (2 cups) Yours was delicious with only 1/4 cup and is now "my" recipe for baked oatmeal. I crumble mine and pour milk over it with maple syrup....YUMMM Thanx for the recipe.

This was very good and the pieces are huge. The nutrition values shown don't match WW or FitDay. I get 3 WW points, 173 cal, 2 g fat, 5 g fiber, and 9 g protein. It is actually quite healthy. I used Splends brown sugar blend and also dried berries in place of the raisins. The recipe also lends itself to being cut in half. I would definately make again using a variety of different dried fruit--like peach, mango, etc.
