ingredients
- 1 1⁄2 cups flour
- 1 cup oatmeal
- 1⁄4 cup Splenda brown sugar blend
- 1 teaspoon baking powder
- 1⁄4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1⁄2 cup applesauce
- 1⁄4 cup Egg Beaters egg substitute
- 1⁄2 cup nonfat milk
- 1 cup frozen mixed berries
directions
- Preheat oven to 375. Prepare muffin cups with liners or spray cups with non-stick cooking spray.
- Mix all ingredients together except berries.
- Thaw and drain mixed berries.
- fold in berries into muffin mix .
- pour into muffin cups until 2/3 full.
- Bake 15 minutes or until toothpick inserted comes out clean.
- Muffins are dense and will not rise very high.
