Oatmeal Chocolate Chip Cookies

"This is a variation of a standard chocolate chip cookie recipe. The oat flour gives the cookies a little extra crunch, but they are still soft and chewy. I had to taste test several before I let anyone else have any. Cooking time is per sheet."

  • Put oatmeal into a food processor and pulse until flour- like texture.
  • Cream butter and sugars together.
  • Add egg and vanilla. Beat until smooth.
  • Add flours and baking soda, mix until blended.
  • Add chocolate chips.
  • Drop by tablespoonfuls onto cookie sheets. I use a cookie scoop.
  • Flatten cookies slightly.
  • The dough can be frozen at this point, you can either bake from frozen or thaw and bake.
  • Bake at 350 for 8-10 mins for soft cookies, 10-12 mins for crunchier cookies.
