Oatmeal Chocolate Chip Cookies

ingredients
- 1 1⁄2 cups softened butter or 1 1/2 cups margarine
- 3⁄4 cup white sugar
- 3⁄4 cup brown sugar
- 2 eggs
- 1 vanilla beans, cut and scraped or 2 teaspoons vanilla extract
- 1 1⁄2 cups flour
- 1 1⁄2 cups oat flour (see note)
- 1 teaspoon baking soda
- 2 -3 cups chocolate chips
directions
- Put oatmeal into a food processor and pulse until flour- like texture.
- Cream butter and sugars together.
- Add egg and vanilla. Beat until smooth.
- Add flours and baking soda, mix until blended.
- Add chocolate chips.
- Drop by tablespoonfuls onto cookie sheets. I use a cookie scoop.
- Flatten cookies slightly.
- The dough can be frozen at this point, you can either bake from frozen or thaw and bake.
- Bake at 350 for 8-10 mins for soft cookies, 10-12 mins for crunchier cookies.
