  1. Soak oatmeal in buttermilk for about an hour.
  2. beat egg and cream with sugars. add to soaked oatmeal mixing well.
  3. sift flour with salt, baking soda and baking powder. add oatmeal mixture.
  4. add oil last mixing well.
  5. fill greased muffin pans about 1/2 way.
  6. bake @ 400 degrees F for 15 to 20 minutes or until toothpick inserted comes out clean.
