Oatmeal Pancakes

"These are different and, in my opinion, delicious. Not a favourite with the men in my house (sigh) so I don't get to make them too often. ("Ew, wheat germ.") Hope your family likes them!"

  • In bowl, pour milk over rolled oats; let stand for 5 minutes.
  • In another bowl, stir together flours, wheat germ, sugar, baking powder and salt.
  • Beat eggs and oil together; add to dry ingredients along with milk/oats mixture, stirring just until mixed (if batter is too thick, add a little more milk).
  • Heat a large greased skillet over medium to med-high heat.
  • Pour in about 1/4 cup batter for each pancake and cook for about 2 minutes or until bubbles on top break but do not fill in, and bottoms are golden and set.
  • Turn over and cook for about 30-60 seconds longer, or until set.
  • Best served with peeled apple slices that you've previously sauteed in butter and brown sugar and kept warm; or with pure maple syrup.

  1. These pancakes were simply delicious and filling, and healthy to boot. I just didn't tell my "men" what was in the pancakes and they both loved them. Will definately make again.
     
  2. Fabulous! They were fluffy and filling with a wonderful flavor. I used butter flavor cooking spray on my griddle for an extra layer of flavor. 5 stars+!

  4. My favorite pancake recipe ever! So much flavor!! I only had old fashioned oats so I soaked them a bit longer (10 min) and it worked just fine. This recipe will be repeated!! Thanks for sharing!
     
  5. When I read the ingredients...I knew I had to try this recipe!! I have a recipe for Irish Soda Bread that we make (alot!) with almost the exact ingredeints LOL. I used approx 3/4 cup of raisins also put them in the oatmeal and milk and let them soak together...Fabulous pancakes...very very filling!! Thank you for posting!!

Tweaks

  1. Wonderful! I used all whole wheat flour instead of half all-purpose, and sucanat instead of brown sugar, and it turned out great! Not fluffy, but not dense either. Great with real maple syrup. I also like them with natural almond or peanut butter spread on top. Makes a lot so I freeze the leftovers for later! Thanks for the recipe, it's a keeper!
     
  2. Very delicious! I only used 1 cup quick oats & used whole wheat pastry flour instead of the white flour (thanks for that suggestion for another reviewer!). Used applesauce for the oil & added cinn & Splenda. Next time I'll grind up the oats-just a preference. LOVED the healthy ingredients!
     
  3. I found these rather tasty- I substituted honey for brown sugar and they were still good. A healthy alternative to traditional panackes! Debbie
